@kalejunkie for more—I’m excited to share my ARMENIAN STUFFED BELL PEPPER DOLMAS, a very delicious and EASY recipe from my childhood. Note: I’m sure many middle eastern cultures have a similar dish, I’m sharing how we—in an Armenian household—made it, courtesy of my mom and grandma. This dish is SO FLAVORFUL, and the meat and rice cook inside the bell peppers, so all those juices are inside the peppers when you cut them open. I promise this recipe is quick, easy and you can’t mess it up! I love a big dollop of greek yogurt on top, but it’s totally optional. ENJOY!

6 large red bell peppers
1 1/2 pounds ground lamb (traditional) or ground beef/turkey/chicken (less traditional)
3/4 cup short grain rice (uncooked)
1/2 cup flat leaf parsley, finely chopped
