@kalejunkie for fun recipes! HOMEMADE PUMPKIN BUTTER!!! Every year I look forward to the day when I see pumpkin butter at Trader Joe’s, but my version is better—it uses honey instead of cane sugar for a slightly different (more delicious) taste! If you’ve never had pumpkin butter before, it’s not butter! It is just a pumpkin spread that you can add to toast, your oatmeal bowls, ice cream, or even your coffee—IT IS SO SO SO GOOD! The best part? You need only 5 simple ingredients to make it, and it’s the perfect way to use up any opened jars of pumpkin that you’ve accumulated so far :)

1 cup pumpkin purée
1/4 cup honey
1/2 lemon, juiced
1 teaspoon vanilla extract
