You may remember those baked salmon ā€œsushiā€ cups that went around last year — here is another version that doesn’t require baking the nori. These are fun to pick up and pop into your mouth, and are best enjoyed right away while the nori is still crispy. Just make the delicious salmon mixture and top each piece of nori with rice, avocado, cucumber, the yummy salmon, and then I finished it with a touch of sriracha and furikake. It was a fun DIY dinner that my boys loved too…WIN WIN.
