@kalejunkie for more fun ideas! You may remember those baked salmon āsushiā cups that went around last year ā here is another version that doesnāt require baking the nori. These are fun to pick up and pop into your mouth, and are best enjoyed right away while the nori is still crispy. Just make the delicious salmon mixture and top each piece of nori with rice, avocado, cucumber, the yummy salmon, and then I finished it with a touch of sriracha and furikake. It was a fun DIY dinner that my boys loved tooā¦WIN WIN. Youāve got to try it!ā£

Hereās how I made them:ā£
1 pound salmon, skin removed and cubedā£
2 tablespoons kewpie mayo (or spicy mayo or my homemade mayo)ā£
2 tablespoons soy sauce or coconut aminos ā£
2 tsp rice vinegarā£
Pinch sea saltā£

1 1/2 cups cooked rice ā£
