I nailed this recipe, it tastes exactly like Chipotle, but BETTER—it’s fresher, it’s homemade, and that addition of cumin take it to the next level. You’ll see smirk 😏!
**I recommend using organic, non-gmo corn, and it will say that on the bag!
2 bags frozen corn (I use 2, 14 oz bags)
1 large poblano pepper
1 small red onion, diced
2 jalapeños, sliced, seeds removed, and diced
1/2 cup cilantro, finely chopped
1 lemon, juiced
1 lime, juiced
2 tsp cumin
1 tsp salt
Prepare frozen corn according to package instructions (boiling the corn in water or in the microwave). Let the corn cool while you prepare everything else. Next, roast the poblano pepper.
