We call this ‘Vosbov Kufte’ and this is a vegetarian dish that’s typically enjoyed in Armenian households during Lent, as part of a mezze spread. I grew up eating this all year long, so when my mom was in town, we decided to make a big batch. I wanted to share this recipe with you because it is SO easy to make, super flavorful, healthy, and they are great for meal prep because they are meant to be enjoyed room temp/cold.
