MY FAVORITE BAKED BEEF STEW from
@kalejunkie! This is one of my favorite hearty meals to make for Easter, and like all KJ recipes, it is EASY. There’s no need to brown the meat first, and the meat tenderizes and the veggies soften in the thick broth. We like to eat this with crusty sourdough on the side, but it’s also perfect as-is.
It makes 6-8 servings and you can easily freeze any extras.
1 14-oz can diced tomatoes
1 1/2 cups beef broth
1 tb cumin
2 tsp coriander
3 tb arrowroot or tapioca or corn starch (this is the thickener)
Salt & pepper
2 lbs stew meat, cut into 1-inch cubes
3 carrots, cut into 1-inch pieces
1 onion, chopped
3 ribs celery, chopped
1 cup baby potatoes, cubed
2 bay leaves
