FLOURLESS DOUBLE FUDGE CHICKPEA BROWNIES from
@kalejunkie, so good you won’t believe they are made with chickpeas 😱! They taste like a decadent brownie you’d buy in a bakery, but better—and the best part is, the batter is so good, you can eat it by the spoonful! They also happen to be vegan, gluten-free, and can be made nut-free too!
1 15-oz can chickpeas, drained and rinsed well
3/4 cup peanut butter (or any nut butter or sunflower seed butter)
1/3 cup maple syrup
3 tb unsweetened cocoa powder
2 tsp vanilla extract
1/4 tsp baking powder
1/2 tsp baking soda
3 tb milk of choice (I used oat milk)
1/2 cup chocolate chips + a few tablespoons extra to sprinkle on top
Preheat oven to 350F. Rinse and drain your chickpeas very well. Add them to a food processor, along with the peanut butter, maple syrup, cocoa powder, vanilla, baking powder and baking soda. Pulse well (batter will be thick), then add the milk. Pulse again until the batter is as smooth as possible. Mix in the chocolate chips...
