@kalejunkie for more recipes & ideas! MIXED UP NUT BUTTER, the best way to use up those opened packages of nuts (and seeds)! Every year I take inventory of the opened nuts and seeds I’ve purchased and make a big batch of the CREAMIEST and most delicious homemade nut butter.
This tastes better than anything you can buy in the store and you can customize it to your taste preferences. Want a little sweetness? Add a little maple syrup or coconut sugar.
Here’s my general recipe (makes 2 cups of nut/seed butter):
2 1/2 cups raw nuts and seeds of choice (I typically use cashews, walnuts, pecans, almonds, and sunflower seeds)
1/4 cup coconut oil, melted
1/2 tsp sea salt
Preheat oven to 350F. Add all nuts and seeds to a baking sheet. Roast for 8-10 minutes, shaking the pan halfway through. Remove the pan from the oven and transfer the nuts to a high-speed blender or food processor. Add the melted coconut oil and salt. Blend until creamy. You might need to scrape down the sid...
