I am spread thin lately, so the last thing I want to stress over is breakfast in the mornings. These tortilla egg cups have been a game changer on busy mornings and you can customize them with your favorite fillings.
Makes 12 egg cups
12 small tortillas (street taco size)
12 eggs
1 tomato, finely chopped
3 tb chives, finely chopped
3 pieces bacon, finely chopped
Salt & pepper to taste
Preheat oven to 350F. Add tortillas to a muffin tray. Gently drop an egg in each one. Add chopped tomato, chives, bacon and sprinkle with salt and pepper. Bake for 20 minutes or until the eggs are cooked to your liking. Enjoy. Store leftovers in a covered container in the refrigerator to enjoy all week long!
