I took my popular pumpkin snickerdoodle recipe and popped a Frankenstein Reeses peanut butter cup on top (because it’s GREEN), added eyes and called it a day. The snickerdoodle cookie base is soft and chewy and of course, a melted Reeses on top is chef’s kiss.
And if you don’t eat/like Reese’s, that’s ok! Add your favorite PB cup on top. The key is to press it on top of the cookie when it comes out of the oven, so it melts, and the eyes stick.
Pumpkin Snickerdoodles (makes 12 cookies)
2 cups almond flour
1/4 cup pumpkin puree
1/4 cup maple syrup
1 tsp vanilla extract
3 tbsp coconut oil, melted
1 tsp pumpkin pie spice
1/4 tsp salt
1 tsp baking powder
12 Reese’s Frankenstein Cups
24 candy eyes
