PEANUT BUTTER RAMEN HACK inspired by my friend Vince from @thetastebud. It’s a quick and easy (non-traditional) comfort food meal that comes together in minutes, and it’s SO GOOD. No broth needed. Sharing my vegan + gluten-free version of Vince’s peanut butter ramen below!
1-2 packages ramen noodles (I used rice ramen noodles from @lotusfoods)
2 tb peanut butter (I use @georgiagrinders)
1 tb sesame oil
1 tb coconut aminos (or soy sauce)
1 tb garlic chili paste
1 lime, juiced
3 scallions, chopped
Cook ramen noodles according to package instructions and set aside, reserving some of the cooking water to thin the sauce. In a bowl, make the sauce by whisking together the ingredients. Add the noodles to the sauce, toss to coat well, and ENJOY!!!
