SINGLE SERVING BAKERY STYLE PUMPKIN SCONE! 🎃
I don’t know about you, but sometimes I want a delicious, bakery-style baked good without making an entire batch - I want just ONE. So I created the single serving SCONE, and it’s so delicious. It’s NOT overly sweet, because I like to eat mine with jam, but if you like a sweeter scone, add 1 tsp maple syrup.
I haven’t tested subs for this recipe, so if you make swaps, I can’t guarantee the same texture/result, mkayyyyy 😏?
Makes 1 scone
1/2 cup rolled oats, ground into a flour (or 1/3 cup + 1 tb oat flour)
2 tb brown sugar (or coconut sugar)
1/4 tsp baking powder
1/4 tsp pumpkin pie spice
2 tb pumpkin purée
1 tb cold butter, cut into small cubes (or vegan butter)
2-3 tb milk of choice
2 tb chocolate chips
