THE ULTIMATE KALE TABOULEH SALAD is here and you do not want to miss this one! Growing up in a Lebanese-Armenian household, we ate traditional tabouleh, made with parsley. So using kale in place of the tabouleh is NOT traditional, and will probably piss off some purists, but that’s not my problem is it? It’s a fantastic recipe, ANDDDDDDDD I think it’s better than using parsley because kale doesn’t get soggy, which means it’s also perfect for meal prep!

For the Salad:
1 Bunch Kale, chopped
6 Roma Tomatoes, diced
1/2 Cup Bulgur, moistened
1 Bunch Green Onions chopped thin
1/2 Bunch Fresh Mint chopped fine
1/2 Green Pepper or 2 Jalapeños diced small
For the Dressing:
1/2 Cup Fresh Lemon Juice
1/2 Cup Olive Oil
1 1/2 Teaspoons Sea Salt
1 Teaspoon Black Pepper
