EASY AF TERIYAKI SOBA NOODLE BOWLS 🥣
I’ve been getting lots of requests for easy, plant-based dinners, so here’s one that’s not only EASY, it is SUPER flavorful thanks to the magic sauce made with ingredients you probably already have in your pantry! I also really like using soba noodles to change things up - they are more nutritious than regular pasta and are gluten-free (just double check the package), and soak up the flavors of whatever sauce you add.
If you want to add protein, add chicken or tofu. We’ve been enjoying it just like this!
Ingredients
1 package (100g) soba noodles
2 tb olive oil
1 zucchini, chopped
1 cup broccoli florets, cut into bite site pieces
1 cup cauliflower florets, cut into bite size pieces
1 carrot, sliced finely
1 red bell pepper, sliced thinly
