COPYCAT EREWHON CABBAGE SLAW! Follow

A few weeks ago I was in LA and stopped at Erewhon (my favorite place) for lunch and saw a version of this salad in the case—I bought a huge container and inhaled the whole thing in < 5 min, so I knew I had to recreate it for you guys! My recipe tastes exactly like the Erewhon version, and it make a HUGE amount, so you can enjoy this all week long. And because there is no lettuce, this slaw gets better and better as the days go by. I can’t wait for you to try it!
Makes 8 servings
1 small head red cabbage, finely chopped
1 cup cilantro, finely chopped (1 bunch)
1 cup parsley, finely chopped (1 bunch)
3/4 cup green onion, finely chopped (1 bunch)
Dressing
1/3 cup olive oil
1/4 cup apple cider vinegar
1/3 cup coconut aminos (or sub tamari or low sodium soy sauce)
2 tb maple syrup
1-2 tsp salt
1-2 tsp ground black pepper
