This is a recreation of the ceviche recipe that I had on my honeymoon over 10 years ago and couldn’t stop eating every day on said vacation. When I make it it at home, I eat it with tortilla chips, but it’s also wonderful served over crusty bread, a bowl of rice, on tortillas, etc.⁣ ⁣ If you aren’t familiar with Ceviche, it’s a South American dish with origins that go back to Peru.
