Quick & Easy & VERY YUMMY Matzah Avocado Toast! 🥑 I’m not Jewish but I grew up eating lots of matzah and every time I do, it brings up lots of childhood memories! So today I made a super easy avo-fried egg “toast” using matzah instead of bread to participate in the @ujafedny’s #MatzahChallenge to support humanitarian relief in Ukraine! For every post tagged with #MatzahChallenge, $18 gets donated to Ukraine, thanks to a generous donor. So far, UJA had allocated more than $8 million in humanitarian aid within Ukraine and for refugees in the war zone.⁣ ⁣ To make this—you need one matzah! Mash 1/2 an avocado and spread it on the matzah. Add arugula dressed in olive oil, lemon juice and salt, two eggs fried in butter or ghee, then assemble.
