Really living up to my kalejunkie name with this LEMONY-GARLIC-PARM KALE SALAD! šš§ Thereās one salad at Whole Foods that I used to eat every single day, and here is my version of it (ie, the better version š). ā£

Makes 6 servings (or in my case, 1)ā£
2 bunches curly kaleā£
1 cup croutonsā£
1/2 cup freshly grated parmesan cheeseā£
1/4 cup olive oilā£
1/4 cup lemon juiceā£
3 cloves garlicā£
1 tsp sea saltā£
1/2 tsp black pepper ā£

Wash the kale. Rip the kale leaves from the stems, and set the stems aside. Chop kale and place it in a large bowl. Add a tsp-or so of salt and use your hands to massage the kale for about 1 full minute, until it softens (this is important). Next, chop/crush the croutons finely, and add it to the bowl with the kale. Finally, prepare the dressing. In a bowl, whisk together the olive oil, lemon juice, garlic, sea salt and black pepper.
