Growing up in an Armenian household, breakfast wasn’t really that big of a deal. It was typically a few pieces of cheese, olives, cucumbers, parsley, bread, jams, and done! But once in a while, we’d have “Tomatoes & Eggs,” either as an omelette or a soft scramble (pictured here) which I didn’t love that much as a kid, but now LOVE! It’s SO SO simple (3 ingredients), but it is super delicious. And that’s because the juices from the tomato cook with the eggs, soft scrambled in a little butter which makes everything taste better! If you like ketchup and eggs, you’ll LOVE this!
Makes 1 serving
1 tablespoon butter
1 tomato, chopped—with the juices!
2 eggs + 2 egg whites
Salt & pepper to taste
Garnishes: parsley, feta cheese, cucumbers
