TUNA-TOMATO SALAD šŸ… with homemade dijon vinaigrette @kalejunkie šŸ’šŸ»ā€ā™€ļø// Another dressing so good, you’ll want to drink it from the bowl, just saying. This salad is also another great one for meal prep lunches because there’s no lettuce, which means that it won’t get soggy sitting in your fridge for a few days. And of course, if you are vegan, omit the tuna and add any ingredient you love!⁣ ⁣ Makes 3/4 cup dressing⁣ 1/2 cup olive oil⁣ 1/4 cup apple cider vinegar⁣ 2 tb dijon mustard⁣ 2 tsp oregano⁣ 2 cloves fresh garlic, mashed or minced⁣ Salt and pepper to taste⁣ ⁣ Salad⁣ 2-3 cups cherry tomatoes, sliced⁣ 1/4 cup chopped red onion⁣ 1 can tuna or trout, drain liquid from the can⁣ ⁣ First make the dressing by whisking together all of the ingredients, and set aside. Chop the tomatoes and onions, and place in a medium bowl, along with the tuna-trout. Toss with as much dressing as you like, and save any extras.
