TUNA-TOMATO SALAD š
with homemade dijon vinaigrette

This salad is also another great one for meal prep lunches because thereās no lettuce, which means that it wonāt get soggy sitting in your fridge for a few days. And of course, if you are vegan, omit the tuna and add any ingredient you love!ā£

Makes 3/4 cup dressingā£
1/2 cup olive oilā£
1/4 cup apple cider vinegarā£
2 tb dijon mustardā£
2 tsp oreganoā£
2 cloves fresh garlic, mashed or mincedā£
Salt and pepper to tasteā£

Saladā£
2-3 cups cherry tomatoes, slicedā£
1/4 cup chopped red onionā£
1 can tuna or trout, drain liquid from the canā£
ā£
First make the dressing by whisking together all of the ingredients, and set aside. Chop the tomatoes and onions, and place in a medium bowl, along with the tuna-trout. Toss with as much dressing as you like, and save any extras. Toss to coat well, and ENJOY!!!ā£
