We spent a few days The_Macallan Estate and were lucky to able to explore the beautiful Speyside surroundings, see the whisky making process and meet the makers who have passed down skills from generation to generation. It was topped off with an incredible dining experience on the banks of the River Spey, before we got to experience the incredible TimeSpirit restaurant, including a menu in collaboration with the Roca brothers hosted by the legend himself Joan Roca.
