My husbands Mother passed away when he was 16 yrs old and there are certain dishes that I make often because she made them and I know they remind him of her. Food memories are so real and so powerful and I love leaning into them. One of those dishes from his childhood is the classic green bean casserole made with Campbell’s cream of mushroom soup that he remembers her making every Thanksgiving. I gladly make it for him every year because he loves it and that is what’s important, but I put my own spin on it. I make mine with homemade cream of mushroom soup and onion rings 😊 I’m sure his Mom would have approved ❤️ *this can be completely set up the day before and covered, without the onion rings. Park in the fridge overnight and when ready to bake off the next day, top with the onion rings and bake off! No need to cook onion rings first.
