Just in case you thought your Thanksgiving salad had to be sad & boring, I’m here to prove you wrong! This is also fantastic for meal prepping throughout the week because the kale and Brussels sprouts are a sturdy base. Plus the dressing goes great on just about any salad! Add some rotisserie or grilled chicken for a nice hearty lunch. Yum!
Serves 6-8
FOR THE SALAD:
2 sweet potatoes, peeled and chopped into 1/2 inch cubes
1 large bunch curly kale, stems removed and chopped (about 8 cups chopped)
4 cups Brussels sprouts, stems removed and thinly sliced (or buy pre-shredded)
2 honeycrisp apples, chopped into 1/2 inch cubes (about 3 cups chopped)
1/2 cup dried cranberries
1/2 cup sunflower seeds
6 oz goat cheese crumbles
FOR THE DRESSING:
1/2 cup olive oil
1/4 cup apple cider vinegar
1 1/2 tablespoons maple syrup
1 teaspoon dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Optional: 1 small clove garlic, grated or minced
