Winter’s here — and so is Korea’s bustling gimjang season! Gimjang is the traditional Korean ritual where families gather to make kimchi together. Around this time, many Korean households prep anywhere from 20 to a whopping 200 heads of cabbage. Chopping, washing, salting, and seasoning all those cabbages turns into a multi-day marathon — tough, messy, and exhausting, but so worth it in the end. These days, a lot of people just buy kimchi because gimjang can be a hassle — but since traditional Korean food is rooted in community and doing things together, it’s so much more than just “too much work.” It’s meaningful in a bigger way. And of course, every family has their own secret recipe, which is why no two kimchis taste the same. With this much love poured into kimchi, is it any wonder it became Korea’s signature dish?
