For me, Stuffed Shells are one of those reminiscent meals that brings me right back to childhood. Especially at the Holidays. We never celebrated a Holiday or any big occasion without a tray of my Grandmothers Stuffed Shells. And now, I make sure that my family doesn’t either. The great thing about these is that it’s very easy for me to make a tray of vegetarian shells and a tray of meat stuffed shells to please everyone in the house. 2 cups Ricotta cheese
1 cup frozen spinach thawed and squeezed dry
3/4 cup Parmesan (divided)
1 egg
1 teaspoon salt
1/2 cup fresh chopped parsley (divided)
1/4 cup fresh chopped basil
1/4 teaspoon dried oregano
1/4 tsp chili flakes
3 cups marinara sauce (homemade or store bought)
1 cup shredded mozzarella cheese
