Jammy Gingerbread Sandwich Cookies! These little sandwich cookies are spicy, sweet and such a treat! Some may call them linzers, but since these are gingerbread I’m not sure? I used strawberry jam and royal icing to create the toadstool colors that are sandwiched between my “No Spread Gingerbread” recipe!
½ cup unsalted butter - softened (or shortening)
⅔ cup light brown sugar
3 ½ cups all-purpose flour, plus more for dusting
1 tablespoon ground ginger
1 ½ tablespoon ground cinnamon
⅛ teaspoon salt
1/2 cup heavy cream (or any milk)
½ cup molasses
Add the flour, ginger, cinnamon, and salt to a large mixing bowl. Sift to combine. Set aside.
Cream together the butter and the sugar with your electric mixer until just combined. Scrape down the sides.
Add the cream/milk and molasses and stir on low until well incorporated. Add in the flour slowly. I like to use a large spoon and add a spoonful at a time until there’s no flour left. Stop periodically to scrape the side of the bowl to ma...
