Every holiday season, I come back to this citrus and pomegranate shrimp ceviche. It’s easy, refreshing, and I love how the winter citrus makes it feel naturally festive. It’s the kind of dish I can make quickly but everyone always remembers. Winter Citrus Pomegranate Shrimp Ceviche Prep time: 10 minutes Cooking time : 0 minutes Servings: 6 Ingredients For the shrimp: • 1 lb raw shrimp, peeled, deveined, finely chopped • 1/2 cup fresh lime juice • 1/4 cup fresh lemon juice For the mix-ins: • 1/3 cup finely diced red onion • 1 grapefruit, segmented and chopped • 1 orange, segmented and chopped • 1/2 cup pomegranate arils • 1/4 cup chopped cilantro • 1 tbsp olive oil • Salt, to taste • Black pepper, to taste • Pinch of cayenne (optional but recommended) Instructions Place chopped raw shrimp in a glass or stainless steel bowl.
