Spiced Chickpea Sambusak
Filling:
2 cans cooked chickpeas
2 medium onions, roughly chopped
3 garlic cloves, minced
1 cups water
1/4 cup olive oil
3 tsp cumin
1/2 tsp turmeric
1/2 tsp sweet or smoked paprika
1 tsp coarse black pepper
Salt to taste
Cook chickpeas with the liquid from the cans + 1 cup water and all the spices for 1hr min on low. Drain & Keep the chickpea water and cool. Set chickpeas aside.
In a frying pan, sautée the onions with the garlic. Sprinkle some salt and set a side to cool down. Meanwhile make the dough.
Dough:
520g AP flour
7g instant yeast
70ml sunflower oil
10g salt
15g sugar
240ml ( 1 cup) of the chickpea water
Mix dry ingredients (except salt). Add salt, then slowly add chickpea water and oil - knead to a soft dough. Rise 1 - 1.5 hrs
