craving SEARED SALMON TACOS
like no other— but especially for lunch! there’s just something about the combination of buttery, juicy fish, fluffy jasmine rice, fresh greens, herbs and a little avocado bundled up inside warm, chewy tortillas that keeps me coming back for more... and seconds are always a good idea 👏
to make: start with a salmon fillet and pat dry, then brush with a nice coat of avocado oil across the top. sprinkle with sea salt, sear skin-side up for about 3 minutes over medium-high heat, then flip and cook for another 3-4 min. to assemble, warm a few tortillas in a dry pan or over a burner (I used eatcoyotas cassava tortillas) then fill with steamed rice (organic jasmine from traderjoes), salmon, and a handful of chopped romaine/greens + scallions, a few slices of cucumber, herbs (basil, cilantro or mint) and diced avocado. finish with flaky salt, b...
