👏🏻Keepin’ the peace Sweet Potato Casserole 👏🏻 🥔Sweet Potato Casserole 💛Filling: 1/2 cup unsalted butter (1 stick), melted 6 large sweet potatoes - about 4 pounds, scrubbed 2 large eggs, at room temperature 1 14-ounce can sweetened condensed milk 1/4 cup granulated sugar 1 teaspoon vanilla extract 1 teaspoon salt 💛Topping: 1 cup finely chopped pecans 1/2 cup light or dark brown sugar well packed 1/2 cup all purpose flour 1/4 cup unsalted butter (1/2 stick), melted 2 cups mini marshmallows Pierce sweet potatoes with fork several times. Bake at 400 degrees. Check at 50 minutes. If fork tender, they are done. Once cool, remove the skins and add sweet potatoes to stand mixer. Mix until mashed. Add melted butter, eggs, sugar, salt, condensed milk and vanilla. Mix until combined.
