A Brunch with Babs FAVORITE 🌽“GRILLED” Corn Salad inspired by ELOTE but “OFF THE COB” (esquites) 🌽 4 medium fresh ears of corn 1 1/2 tbsp avocado oil 1/3 cup chopped red onion 1/3 cup cilantro 1 1/2 avocados chopped 1 garlic clove 3 oz cojita or feta cheese 1/2 tsp chili powder 1 jalapeno seeded, rinsed, and minced (optional) 3 tbsp mayo 2.5 tablespoons lime juice Salt Brown the corn for 7-10 minutes on low heat. Add garlic and sauce for one more minute. Combine everything except lime juice and chili powder. Combine the chili powder and lime juice and pour over salad.
