The recipe for the fish will be posted tomorrow! Russet potatoes pealed sliced on a mandolin at a quarter inch setting. Then take the potato disks and slice them vertically into french fries and place in a bowl of cold water to keep from discoloring. Then heat avocado oil between 300 and 325 degrees on a thermometer. Drain potatoes and pat dry. Place in hot oil until barely browned. Then heat oil between 350 to 375 degrees and put the potatoes back in until they are nice and brown. Take them out and drain.
