The Ultimate Chocolate Chip Cookie - a copycat from Gideon’s Bakery in Disney Springs.  Three of my eight grandchildren are VERY into Disney and found this recipe for me to make for the Big Game today!  2 cups mini chocolate chips, 2 cups semi-sweet chocolate chips, 1 cup cold salted butter cubed, 1/2 cup dark brown sugar, 1/2 cup light brown sugar, 1/2 cup granulated sugar, 2 eggs, 2 tsps vanilla, 1 tsp kosher salt, 1 tsp baking soda, 3 cups all purpose flour.  Preheat oven to 400 degrees and line a baking sheet with parchment.  In a medium bowl, combine all of the chocolate chips.  Mix evenly and set aside.  In the bowl of your stand up mixer fitted with the paddle attachment mix together the butter and all of the sugars for 30 seconds on low speed, turn the mixer to medium and mix 4 minutes until combined and fluffy, Add the eggs, vanilla, salt, and baking soda and mix for 1 minute.  Turn the mixer to low and add flour and mix until combined.  Add 1 1/2 cups chocolate chips to batte...
