this recipe for my anti inflammatory roasted carrot & ginger soup has a lot of meaning behind it - it reminds me of how I was able to overcome a very low moment in my life, and it now brings me a lot of warmth and joy. this soup was the start of my anti inflammatory series last year, when I was suffering from inflammation post endometriosis & ovarian cyst surgery, all while trying to get pregnant.
