Loaded Baked Potato Soup
Serves 6
8-10 Yukon gold potatoes, peeled and chopped
4 cups whole milk
½ cup Gay Lea Unsalted Butter
½ cup Gay Lea Original Sour Cream
4 cups chicken stock
2 cups cheddar cheese
4 slices bacon, chopped
1 cup green onions
¼ cup flour
2 garlic cloves, chopped
½ white onion, chopped
Salt & pepper
Directions
Preheat oven to 420F degrees. Line baking sheet with parchment paper and add bacon to the lined baking sheet. Cook for 8 minutes per side. Once cooked, remove from oven and place on a plate with paper towel. Once cooled, chop bacon and set aside.
