Christmas Frittata. A perfect dish to make for your Christmas buffet
I love it when you can prepare, bake and serve something in the same pan! I used my cast Iron staub_usa skillet, but if you don’t have one, you can easily bake this in a casserole dish

Christmas Frittata with Tomato Wreath and whipped pesto ricotta

2 tablespoons olive oil
1 red bell pepper diced
1 medium onion diced
2 cloves garlic chopped
5 ounces baby spinach leaves
1/2 cup milk
1/2 cup sour cream
12 large eggs
Salt and pepper to taste
1 tsp Italian seasoning
1/4 tsp chili flakes
1/2 tsp garlic powder
1 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Preheat the oven to 350F
Heat the oil in a large oven proof skillet. Add the peppers and onions and cook, stirring often, for 5 minutes. Season with s&p.
Stir in the spinach and cook stirring often, until the spinach wilts. Remove the pan from the heat and cool for a few minutes.
Add in the crumbled feta cheese.
