Today I am sharing my cake process AFTER baking my cake layers. After my cakes are done baking, I will let them cool for 15 to 20 minutes in the cake pan. Once the cakes are cooled completely, I will trim the rounded top off of the cake, remove that, then set a cake board on top of that, and flip the cake pan over and remove the cake pan. Once I have my cakes on the cake boards, I will then take my wire cutter and slice right through the center of those cake layers so that I end up with 2 - 1 inch cake layers. After I have cut all of the cake layers in half, I will then get some parchment paper squares and place one square in the center of each cake so that they don’t stick together. Once I’ve done that, I will take my cake layers on the cake boards, and put them in the freezer for about 3 to 5 hours, or until I’m ready to fill and decorate the cake.
