I don’t use fondant to cover my cakes anymore, but I will use it for small details.
Here is my fondant recipe that can be used for all fondant needs. Covering the full cake, or just details.
-16 oz Mini Marshmallows
-1/2 tsp Clear Vanilla extract
-1/4 tsp Almond Extract (optional)
-1 Tbsp water
-4 to 5 Cups Powdered Sugar (more to sprinkle on the counter soace)
Instructions:
-Pour entire bag of mini marshmallows in a extra large, microwave safe bowl.
-Add in extracts & water to the marshmallows.
-Place bowl of marshmallows in microwave and melt on high power for 90 seconds.
-Remove from microwave.
-Add powdered sugar, use rubber spatula to start incorporating to the melted marshmallows.
-Once the powdered sugar has started to incorporate, set spatula aside and start to work the ingredients together by hand.
-Add powdered sugar aa you go to get the thickness you would like.
-Your fondant should not be sticky. It should feel very similar to a thick “play doh” or soft clay ...
