My most viral recipe reel of 2025 was this Eggplant Wrap which has been viewed over 6 million times since I posted it 2 months ago. I had originally made the viral zucchini wrap and absolutely loved it. I was so intrigued I knew I had to make it using an eggplant and was equally as impressed…. and basically since then I haven’t stopped making them. Basically you bake 1 layer of thinly sliced eggplant rounds with a melted layer of mozzarella cheese on top. This brilliant concoction makes up the ‘bread’ of the sandwich.
