Smoked brisket burgers with roasted garlic & chive compound butter, and homemade chips. Enjoy the nice weather, the weekend, and football. Cheers!!
-For the compound butter: roast a head of garlic in a 400 degree oven for roughly 45/50 mins. In a blender or food processor combine one stick of room temp, unsalted butter with the roasted garlic, fresh chives, a couple pinches of salt, black pepper, and a couple dashes of Worcestershire sauce. Blend until smooth & creamy.
-For the chips: slice to your desired thickness and soak in water for 30 mins. Drain and pat dry. Heat oil to 325/350 degrees, and carefully fry the chips in batches until crispy. Combine 1 teaspoon of salt & pepper with a 1/2 teaspoon of paprika, and a 1/4 teaspoon of garlic powder. Sprinkle the chips while still hot, add some fresh chopped chives and coat well. You can also add Parmesan to these.
