This is such a nuanced conversation and there are certainly times when I call for salted butter in my recipes, but here is why most of my baking recipe specifically call for unsalted butter. And here’s a hint: it’s not for health reasons and it’s not because I don’t love flavor. It’s actually because I want to make sure you get the best flavor possible.
