Inspired by the classic love song, Fly Me to the Moon by Frank Sinatra, our Valentine’s Day dessert takes form as a rosemary white chocolate sabayon, blackberry confit and rosemary génoise-filled moon.
Part of our three-course prix fixe Valentine’s Day Dinner menu, this dessert was intentionally curated by our Executive Pastry Chef, down to its rich dark chocolate shell that exhibits the the exact moon phase on the night of February 14th, 2023.
