Ever since I made my own tortillas from scratch last year, i feel I can’t have to any other way (Atleast in my heart.) it’s actually pretty simple and most of it is learning through touch, (no dry patches, don’t over flatten when pressing…)
I follow salty_cocina recipe:
2 cups corn flour
1 tsp of salt
1 1/3rd cup of warm (not hot) water
Mix together and make sure the masa is not dry or flaky, add a little more water if need be
Pack your masa into a ball and cover tightly with plastic wrap and let it sit for 1-2 hrs - then you’re ready to press your tortillas ( I use a tortilla press!) *if using a tortilla press I use parchment paper in between the tortillas so they don’t stick*
