Healthy Vegetarian Caesar Dressing ๐ฅ

ยฝ cup raw cashews
โ cup water, plus more as needed
2 tablespoons organic extra virgin olive oil
1 lemon, juice + zest (about 2 tablespoons juice)
1 ยฝ teaspoon grainy Dijon mustard
1-2 garlic cloves
1 ยฝ teaspoon capers, rinsed
ยฝ teaspoon Himalayan salt
ยฝ teaspoon maple syrup

Combine all dressing ingredients in a high-speed blender and blend until very smooth, scraping down the sides as needed. This recipe will make about half a cup of dressing. This will stay good for up to 5 days in the refrigerator.
