My absolute favorite food in the whole wide world - Turmeric shallots on crispy/herby buckwheat & bean salad - which I’m worried might be a hard sell.
But here’s my pitch - jammy shallots are DIVINE. The perfect vegetable, slightly sweet, can hold up to heat, and are easy to cook. Boom, vegetable done. Buckwheat and roughed-up beans are made extra crispy in the oven, then tossed with cilantro, dill and a touch of red wine vinegar. It brings the balance, you don’t think you need it but you doooo.
Everything together is a textural masterpiece. It’s just my happy food. It always makes me feel amazing.
