To start, I used a single match to ignite Kingsford Match Light coals. It was literally that simple. Once ashed over, I centered the cast iron pan directly upon the grill grates, then warmed a couple tablespoons of avocado oil before sautéing red onion and garlic until just fragrant and golden in color. Next, I tossed in the chorizo and browned until just crispy, then folded in the short rib and prepared until cooked through. The meat was spooned from the pan and set aside to cool. Note: While I used ground chorizo and short rib, because I love the depth of flavor and heat, you could select any ground meat you like, from pork sausage, ground lamb or turkey, elk or venison.
