Do you ever split your macaron batch to make different colors? This was a double batch and I split into 3 different colors. Basically, make the meringue as you would, then add the dry ingredients in and fold just until combined. As soon as you see no more dry ingredients stop folding. Split the batter between different bowls. Color each separately, folding until the perfect consistency is achieved. Be careful at this point not to over mix the batter because you’ve already folded a bit to incorporate the dry ingredients.
