Easy Beef Chili | Part 1 of my Cozy Weeknight Meals Series
Ingredients:
• 2 lbs ground beef
• 1 medium yellow onion, diced
• 1 jalapeño, diced (optional for a little kick)
• 4 garlic cloves, minced
• ½ tbsp oil
• 2 tbsp tomato paste
• 1½ tbsp chili powder
• 1½ tbsp ground cumin
• 1½ tbsp brown sugar
• 1 tbsp unsweetened cocoa powder
• ½ tbsp smoked paprika
• 2 tsp onion powder
• 2 tsp salt (adjust to taste)
• ½ tsp black pepper
• 2 tsp Worcestershire sauce
• ¼ tsp baking soda (helps cut acidity)
• 2 cups crushed tomatoes
• 15 oz pinto beans
• 15 oz kidney beans
• 2 cups water
• 1½ tsp Better Than Bouillon beef base*
*Or use 2 cups beef broth and skip the beef base & water
Instructions:
1. Sauté the aromatics:
In a large pot, heat the oil over medium heat. Add onion, jalapeño, and garlic. Cook for about 5 minutes, until softened.
2. Brown the beef:
Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
