Stuffed Bell Pepper Soup | Part 6 of My Sunday Soup Series ✨
Ingredients:
• 3 large bell peppers (use a mix of red, orange, and yellow), diced
• 1 medium onion, finely diced
• 1 large carrot, diced
• 5 garlic cloves, minced
• 1 lb ground turkey (or any ground meat you like)
• 28 oz can crushed tomatoes
• 8 cups chicken stock
• 1 ½ cups heavy whipping cream
• 2 tbsp tomato paste
• ¾ cup long-grain rice, rinsed
• 2 bay leaves
• 1 tbsp butter + 1 tbsp oil
Seasonings:
• 1 tsp garlic powder
• 1 tsp paprika
• 1 tsp dried oregano
• 1 tsp dried basil
• 1 tsp sugar
• Salt & black pepper, to taste
Directions:
1. Start with the aromatics: Heat butter and oil in a large pot over medium heat. Add diced onion, diced carrot, and minced garlic. Sauté for about 3 minutes until fragrant.
2. Add bell peppers: Stir in the diced peppers, season with a pinch of salt and black pepper, and cook for 8 minutes to soften.
3. Tomato base: Mix in the tomato paste and cook for 1–2 minutes.
