Ingredients
• 2 lb boneless pork sirloin roast, cut into chunks
• ½ cup all-purpose flour (for dredging)
• 1½ tsp salt, divided
• ¾ tsp black pepper, divided
• 2-3 Tbsp olive oil
• 1 small onion, diced
• 1–2 celery stalks, sliced
• 1 Tbsp tomato paste
• 5-6 garlic cloves, whole
• Fresh herbs: a few sprigs of thyme, 2 rosemary sprigs, and 1 sprig of sage
• 5 medium yellow potatoes, peeled and cut into chunks
• 2 medium carrots, sliced
• 3 to 3½ cups water (plus more as needed)
Directions
1. Sear the pork:
Toss the pork pieces with 1 tsp salt, ½ tsp black pepper, and a coating of flour. Heat olive oil in a cast-iron skillet or Dutch oven.
Sear the pork in batches — don’t overcrowd the pan so it actually sears instead of steaming. Brown on all sides.
